Cowboy caviar.
I was introduced to this dish over the summer in Dubuque, and have just been waiting for the day I could try to make it myself. And that day is today.
It’s super tasty, super simple to make, and the black beans and chickpeas (which I substituted for black eyed peas) provide a good amount of protien for my confused vegetarian self.
